Chai Spice Maple Cashew Energy Bites

From the day I have started making my own Chai Spice mix, I’ve gone a little crazy! Honestly!! I have been using fresh Chai spice in almost everything from tea, baked goods to french toast and now to energy bites! Yep… Chai Spice Maple Cashew Energy Bites are a thing and they are so very good!
Actually I was inspired by a recipe of Minimalist Baker and then added my own minor changes to suit my taste. And as you might have guessed, the chai spice is my addition and there is no nut butter needed in the recipe. Dates and the maple syrup provide the sweetness and the moisture needed for this recipe.
And there is no need to mention these energy bites or bliss balls as vegan, gluten-free and dairy free. Just perfect for any diet restrictions and a no cook recipe too. If you already have roasted cashews in your kitchen pantry. Do not use the salted cashews though. Just toss the cashews in oven or in your air fryer or simply in the pan. Roast for a couple of minutes until evenly roasted. You have the primary ingredient ready!

Then comes the dates!! Use the juiciest of the dates you can find. I use the Kimia Dates check that out. Also, the maple, find the best you can. Substitute with honey if you like the flavor.

INGREDIENTS
- 2 Cups [220 gm] Unsalted Roasted Cashews Roast them in pan or air fryer or oven if needed
- 6 Pitted Dates Use Soft dates, else soak in hot water before using. Will reduce shelf life though.
- 1/2 Cup Unsweetened desiccated coconut
- 1 tsp Chai Spice Ground mixture of all spice, ginger, cinnamon, pepper, clove and cardamom
- 3 tbsp Maple Syrup
INSTRUCTIONS
- In the food processor bowl fitted with chopping blade, add all the ingredients and blitz until they get powdered and come together
- You should be able to make small balls out of the mixture without it sticking to your hands
- Make small balls[ about 24 normal bite sized balls]
- Store in an air tight container in room temperature or in fridge as needed
- Enjoy
