While you are in all thing pumpkin mood, try this super delicious, warming and fantastic pumpkin chai spice French toast for breakfast or for brunch. These are just so perfect, very very simple with basics of the ingredients and autumn special, pumpkin.

In this recipe of French Toast, the pumpkin and the chai spice are the hero ingredients.

At this point I want to mention that while getting the readymade spice mix is convenient, nothing beats the homemade spice mix. Combining all the spices, grinding them in a spice grinder just before you need them makes the biggest difference in your final dish in terms of the taste and flavor. So combine the spices and make your own mix as per your preferences, playing around with the proportion as you like in your dishes.

Ingredients
  

  • 8 Slices Crusty Bread Any variety will do.
  • 2 Large Eggs
  • 1 Cup Milk of Choice Regular or plant based
  • 1/2 Cup Pumpkin Puree
  • 1/2 tsp Vanilla Extract
  • 1 tsp Chai Spice
  • 2 tsp Maple Syrup or Brown Sugar
  • 1/2 tsp Salt
  • 4 tsp Unsalted Butter OR Vegan option to fry

To Serve

  • Maple syrup or honey or powdered sugar
  • Fruit of choice
  • Some butter

Instructions
 

  • In a large, mostly flat bowl to help dunk and soak the bread add the eggs, milk, pumpkin puree, chai spice mix, vanilla, sweetener[Maple syrup or sugar] and the salt. Whisk well until combined.
  • Heat the frying pan.
  • Carefully dunk the bread slices, one at a time in the pumpkin custard from step 1 and soak them. Careful, do not overdo and break the bread pieces into the wet mixture.
  • Fry in the pan – 2-3 mins one side and one more minute on the other side until golden brown.
  • Repeat until you have fried all the bread slices.

  • Serve warm with maple syrup and fruits.

Notes

  1. Use milk of choice. Any milk will work.
  2. Ensure you use good quality pumpkin puree. Homemade puree recipe is here.
  3. Any Sweetener of choice will work. Maple syrup works really great.
