In this recipe of French Toast, the pumpkin and the chai spice are the hero ingredients.

At this point I want to mention that while getting the readymade spice mix is convenient, nothing beats the homemade spice mix. Combining all the spices, grinding them in a spice grinder just before you need them makes the biggest difference in your final dish in terms of the taste and flavor. So combine the spices and make your own mix as per your preferences, playing around with the proportion as you like in your dishes.

With that my notes on making your own spice mix is over. Now the time for pumpkin puree. I have a recipe in my blog – that is not runny, no need to drain them and specifically won’t turn your dishes soggy! Check it out and use in this recipe. But, store bought ones do work too. At the end of the day, food is all about convenience and comfort. Making do with what you have is more than perfect, always!
