Crispy Garlicky Prawn Fried Rice

Simple Crispy Garlicky Prawn Fried Rice (Indian Style). If you love bold garlic flavor and crispy prawns, this easy Indian-style fried rice comes together quickly and makes a satisfying lunch or dinner.

Ingredients

  • 250g cleaned prawns
  • 2–3 cups cooked rice (cooled, preferably day-old)
  • 4–5 shallots, thinly sliced
  • 6–8 garlic cloves, thinly sliced
  • 2 green chillies, slit
  • Coriander leaves, chopped
  • 3–4 tsp coconut oil (divided)
  • Salt to taste

For marinating prawns

  • Salt to taste
  • ¼ tsp turmeric powder
  • 1 tsp ginger garlic paste
  • 1 tsp red chilli powder
  • ½ tsp ground black pepper

Method

  1. Marinate the prawns
    Mix cleaned prawns with salt, turmeric, ginger garlic paste, red chilli powder, and ground pepper. Let them rest for 15–20 minutes.
  2. Fry the prawns
    Heat 2 tsp coconut oil in a wok or pan. Add the marinated prawns and fry until slightly crispy and cooked through. Remove and keep aside.
  3. Prepare the garlic base
    Add a little more coconut oil to the same pan. Add sliced shallots and garlic with salt to taste. Fry until lightly golden and slightly crispy.
  4. Add spices
    Stir in:
    • ¼ tsp turmeric powder
    • 1 tsp Kashmiri red chilli powder
    Mix quickly so the spices do not burn.
  5. Combine everything
    Add cooked rice, fried prawns, slit green chillies, and chopped coriander leaves. Toss well until evenly mixed and heated through.
  6. Serve
    Serve hot and enjoy your crispy, garlicky prawn fried rice.

Notes

  • Day-old rice works best for fluffy fried rice without becoming mushy.
  • Adjust chilli powder and green chillies based on spice preference.
  • A final sprinkle of pepper adds extra flavor and warmth.
