Veg Cheese Toasties

These Veg Cheese Toasties are one of those wonderfully simple recipes that come together with just a handful of everyday ingredients. Crisp grilled bread, crunchy onions and capsicum, a little oregano seasoning, and plenty of gooey, melting Monterey Jack cheese — that’s really all you need for a delicious snack or quick meal.

The vegetables are kept simple so their freshness shines through. A pinch of salt and turmeric adds just the right amount of seasoning, while oregano gives the toasties that lovely herby flavour. Grill them until the bread is perfectly crisp and golden and the cheese melts beautifully between the layers.

Serve them hot with ketchup and mayonnaise, alongside some fresh fruit, or simply enjoy them straight off the grill. Perfect for breakfast, an after-school snack, a light lunch or an easy dinner!

Ingredients

  • Bread slices – 8
  • Onion – 1, thinly sliced
  • Green capsicum – 1, thinly sliced
  • Monterey Jack cheese – sliced or grated, as needed
  • Oregano seasoning – 1 tsp
  • Turmeric powder – a small pinch
  • Salt – to taste
  • Butter – for grilling

Method

  1. In a bowl, combine the sliced onion and capsicum with oregano seasoning, a pinch of turmeric and salt.
  2. Place a generous layer of Monterey Jack cheese over a bread slice.
  3. Top with the seasoned onion and capsicum mixture and cover with another bread slice.
  4. Lightly butter the outside of the bread.
  5. Grill in a sandwich maker or grill pan until the bread is crisp, golden and beautifully toasted, with the cheese completely melted.
  6. Cut into triangles and serve hot with ketchup and mayonnaise.

A little tip

Don’t overcook the vegetables before grilling. Keeping them raw and thinly sliced gives the toasties a lovely little crunch against the soft, gooey melted cheese.

Simple ingredients. Crispy edges. Gooey cheese. And a toastie that disappears in minutes!
