Brown sugar Strawberry Snack cake.. A delicious b Brown sugar Strawberry Snack cake.. 
A delicious breakfast or snack cake that is refined sugar free, has fruit, and just so delicious on its own or with a cup of tea. Made with fresh Strawberries, this delicious brown sugar cake has a simple Vanilla brown sugar base, a fruit layer and a oh so yummy buttery brown sugar crumble. It is perfect for anytime.. and I have written btown sugar enough times so it is best we move on to the recipe.

Ingredients 
**For the cake **
Brown Sugar - 125g
Unsalted butter - 75g, melted
Eggs - 2
Vanilla extract - 1tsp
All purpose flour - 175g
Baking powder - 1tsp
Salt - 1/2tsp
Milk - 50ml 
.
**Strawberry layer**
Strawberry- 300g, washed, hulled and quartered 
All purpose flour - 1tbsp
.
**Crumb layer**
All purpose flour- 100g
Brown sugar - 50g
Unsalted butter-75g
Salt - a large pinch
.
Method
1. Grease and line a square or round pan of choice, preheat the oven at 180°C
2. In a mixer bowl or processor bowl add all the cake ingredients and process until smooth. Scrape the sides as needed
3. Pour the batter to the lined pan
4. Toss the Strawberries with flour and top it all evenly on the batter in the pan
5. To the processor bowl, add the crumb ingredients and pulse until crumbly
6. Top it over the fruits, ensure the crumb is spread evenly
7. Bake for 60 minutes at 180°C
8. Cool on a rack, slice and enjoy

Recipe : Easy Prawns fry.. a simple side for rice Recipe : Easy Prawns fry.. a simple side for rice or bread of choice. These prawns come together in minutes, are spicy, crispy and just fantastic with tacos as well. 
All you need are some simple ingredients,  cleaned and deveined prawns and basic spice powders - turmeric, red Chilli and ginger garlic paste. Very very simple
. 
Ingredients 
Prawns - 200g, thoroughly cleaned 
Oil - 2 tsp
Ginger garlic paste- 1tsp
Salt as needed
Turmeric powder- 1/4 tsp
Red Chilli powder- 1tsp
Water - a splash 
Lemon juice - 1 tsp
.
1. Heat a pan and add the oil
2. Add the cleaned prawns and saute
3. Add the ginger garlic paste and continue sautéing 
4. Add the salt, turmeric powder and Chilli powder.  Stir and add a splash of water. Cook on high flame for a few minutes
5. When the prawns start crimping up add the lemon juice
6. Serve hot

Idli and spicy tangy red chutney . . Making idli a Idli and spicy tangy red chutney

Making idli and getting them Fluffy, soft and delicious is always a satisfaction that cannot be measured. I just love it. But working full time and making idli may sound elaborate and tedious. I know.. still the dish is a part of the tamil cuisine and we cannot do without it. So found simpler ways to make them a regular for breakfast. Read on for my tips for a lesser work, more satisfactory idli.. 
.
1. Take 4 cups of idli rice and 1 cup of urad dal. Wash together until the water runs clear. Add a teaspoon full of fenugreek seeds and soak together until the rice is soaked well. About 1 to 2 hours.
2. Grind the batter in wet grinder if you have it. It is the key to equate the lesser soaking time. It will pulverize and get the wet batter warm and soft and Fluffy. This is very much needed to get a perfect fermented Fluffy batter and in turn soft idli.
3. Now add salt, cover the bowl or the batter box. Let it ferment overnight.
4. Add water only of needed before making idli. The batter should look soft and bubbly, thicker for idli
5. Grease the idli pan generously with Ghee or oil for perfect idlis. 
6. Spoon in the batter and cover the steamer, steam for 10 to 12 minutes
7. Let it cool for a few minutes once steamed and then pop the idli out with a dull knife or a spoon
8. Enjoy hot with chutney or sambar of choice

Roasted tomato Soup .. if you ask me not just chic Roasted tomato Soup
.. if you ask me not just chicken soup, tomato soup can also be said as the "Tomato soup for the soul". Because classic is never out of fashion, the comfort from a bowl of warm soup with toast is the best, anytime!
This soup recipe of mine is quite simple and uses only the basics of the ingredients letting the tomato flavor shine. Roasting the tomato really enhances the taste and the flavor. Just roughly cut the tomato into large chunks, Sprinkle some salt, turmeric and olive oil. Roast at 200°C for 15 minutes. Or if using a soup maker or stove top, saute until the tomatoes are  charred on the corners slightly.I do like to add a bit of turmeric in the soup because it is one easy way of adding the good stuff to the dish!

Ingredients 
Large Tomato - 500g, cut into chunks 
Garlic cloves - 2, peeled
Turmeric powder - 1/2 tsp
Olive oil - 1 tsp
Salt - for taste
Ground pepper - 1 tsp
Ground cumin - 1/2 tsp (optional)
Chilli flakes - 1/2 tsp (optional)
Water - as needed for consistency

Method
1. In a roasting pan add the tomatoes, garlic, salt, olive oil, pepper, cumin and Chilli flakes. Combine well and roast in a preheated oven of 200°C for 15 minutes
2. Transfer the contents to a soup maker, add water to the minimum level and set the mode to SMOOTH. Serve once done
3. If making in a pan, to a deep soup pan add the roasted tomato and the water. Bring it to a boil and then blend.  Bring the blended soup back to boil and switch off the stove
4. Enjoy warm with a drizzle of olive oil on top and cheese toast

Pav Bhaji Pulao or an easy veggie dum biryani with Pav Bhaji Pulao or an easy veggie dum biryani with pav bhaji masala.. made in instant pot. 
I have always been a very strong believer of reusing and repurposing food, ingredients and dishes. 
This is one such recipe, make a yummy veggie loaded pav bhaji masala for breakfast and the repurpose the masala with this famous street dish called tawa biryani. But it is not a tawa biryani now, I have made it a simple layered dum biryani in my @instantpot.in instant pot. Best way to make kids eat vegetables since they won't find chunky pieces in the rice, thanks to the pav bhaji masala, all veggies are mashed. There is a great simple recipe in my blog for the masala. Search soup maker pav bhaji masala.
For my this recipe you need
2 cups of the pav bhaji masala 
1 cups of basmati rice
1/2 cup fresh or frozen Green peas
A handful of fragrant herbs like coriander and mint leaves. That's all. 

Method 
1. Wash the basmati rice and the green peas. In the instant pot, insert the inner pot and add a cup of water. Place the trivet and a heat safe bowl that can hold 4 cups of cooked rice
2. Add the rice and the green peas. Close the lid and set the pressure valve. Set the mode to pressure cook 5 minutes. Quick release after minutes of cooking 
3. Keep ready the fluffed rice and peas, masala and the herbs
4. Now clear out the water and the trivet, and set the mode to sauté 
5. Add a teaspoon of oil, add a layer of the pav bhaji masala. Add some herbs and then a layer of rice & peas
6. Repeat until the ingredients are over  and ensure you have the top layer of masala and greens
7. Cancel saute mode and simply close with the lid. Open after 15 minutes, give a brief stir but maintain layers and serve with raita and chips..

Balsamic Strawberry Chia Jam .. small batch to las Balsamic Strawberry Chia Jam
.. small batch to last just for few days. I mean.. when it is in season, consume the ingredient in anyway you like it!! Strawberry in season means fresh homemade Jam that's flavorful and delicious for breakfast. With some good thick brioche slice, this Jam is the best. 
It needs only 4 ingredients and takes only 15 minutes amd can last out on the counter for 3 days and in fridge for about 5 days or more. Never tried it though since it is small batch and I make often
Recipe can be adjusted as you like.

Balsamic Strawberry Chia Jam
Ingredients 
Fresh Strawberry- 200g, washed, hulled and quartered 
Balsamic Vinegar- 1tsp
Sugar - 60g or more as you like
Chia seeds - 1tsp
.
Method
1. In a sauce pan add the Strawberries, Balsamic Vinegar and sugar
2. Cook in medium flame for a few minutes and then using a thick wooden spoon or masher carefully press down on the Strawberry so it gets mushy
3. Cook for 8 to 10 minutes until the mixture thickens. Stir often
4. Add the chia seeds and give a stir. Cook for a couple more minutes
5. Transfer to a jar and cool completely 
7. Enjoy with bread or pancakes or as any filling for your bakes
