I've been making these Mint Chutney Grilled Cheese I've been making these Mint Chutney Grilled Cheese sandwiches on repeat for the last few weeks and thought why not capture it in the blog although the recipe is very very easy. The mint chutney is the Indian version of Pesto. In place oil we have coconut that gives the needed fat and also body to the Chutney. It has tamarind, spice from red & green chillies, and loads of fresh mint, coriander leaves and optionaly a few sprigs of curry leaves. It is simple, delicious and some crispy gooey melty cheese sandwiches this is several times better than the plain grilled cheese(I love those too, no bad comments about them). 
Try it with some fruits on side or with some potato soup to make it a meal, carbs on carbs is my way!! They are good anyway you want to have them.

Ingredients 
**For the chutney**
Mint leaves - 1 handful, cleaned
Coriander leaves - half a bunch, cleaned with stems if you have
Curry leaves - 2 sprigs, optional
Coconut - 2 tbsp, chunks or grated
Green Chilli- 1
Dried Red chillies - 2
Tamarind extract - 1 tsp
Salt as needed for taste
Water or ice cubes to make the chutney
**For the grilled cheese**
Bread of choice - 8 slices
Cheddar cheese - 100 g, grated
Mozzarella cheese- 100g, grate or tear into small pieces
Butter to fry the sandwiches 
.
Method
1. In a blender jar, add all ingredients and grind the chutney into a spreadable mix
2. Combine the cheese in a bowl
3. Spread the chutney on all 8 slices and add the cheese mix on top of 4 slices. Close with the rest of the slices and make 4 sandwiches 
4. Heat a cast iron pan, melt butter. Cook in medium flame with lid on
5. When one side is golden, carefully flip, drizzle some water and cover with lid cook for a couple minutes until crispy
6. Slice after resting on a cutting board to ensure you have the cheese pull
7. Enjoy

A plate of simple comfort meal.. made for the lunc A plate of simple comfort meal.. made for the lunch today in my plate I have hot rice, Capsicum sambar, yam poriyal, papad & fried pickled Chilli, simple salad and mint coriander chutney. An all dishes vegan plate, this is exactly how we like it at home. 
We went to a wedding function yesterday and usually I'm not a fan of eating in crowded places so that was a pretty bad lunch experience. So all I wanted was to cook something simple, familiar, comforting in every bite but still light, bright amd super delicious. 
Also the pic taken outside in our balcony with harsh sun out adds to the brightness, don't you think?

Sprouts spinach Vadai.. a crispy delicious way to Sprouts spinach Vadai.. a crispy delicious way to use sprouts in your diet. Yeah, deep fried. But it's ok occasionally and you can also airfry. So it is all good. And this is loaded with spinach, onions, red chillies and super cool fennel seeds for the subtle flavor. Add some salt, mix and fry. Just so good.. Try with any spinach of choice and sprouts you have in hands. I made with green moong bean sprouts. 
It's just grind, mix and fry. Three steps, so you can give it a try if you have the ingredients.

Sprouts Spinach Vadai- recipe
.
Ingredients- makes 12 Vadai
. 
Ready to use Sprouts of choice - 200g
Dried Red Chilli- 4
Fennel seeds - 1/2 tsp
Spinach - a large handful, chopped
Onion - 1 large, chopped finely
Salt for taste
Oil to fry
.
Method
1. Grind together the Sprouts, red chilli and fennel seeds without water coarsely.
2. Transfer to a bowl, add the chopped Spinach, onions, salt
3. Shape into Vadai, deep fry in hot oil until golden
4. Enjoy as a snack or with lemon rice like we did

The day I found the versatility of the spicy red chutneys, I have been trying a lot of various combinations. I love them all now.. the coconut chutneys aren't the one way nowadays and this simple chutney made with onion, lots of tomatoes, garlic, red chillies, a handful of split chickpeas, salt and spices sautéed until golden and ground into Chutney, this bright beautiful dish is so delicious. 
Served with soft spongy red rice mini idli this is next level indulgence, healthy though.

Black eyed peas Curry / Karamani Kuzhambu.. Cowpea Black eyed peas Curry / Karamani Kuzhambu.. Cowpeas or black eyed peas are a wonderful source nutrients and is so good, delicious in salads or curries. This curry recipe is usually served with rice or idli/dosai. This curry is also one of our favourite curries because it is spicy, tangy(thanks tamarind), and just so good. 
The recipe can be made with vegetables like eggplant/brinjal or drumstick too. For these  black eyed peas, I rehydrated the dried beans by soaking them in water overnight and pressure cooked in the instant pot in for 10 minutes with a little salt and turmeric. You can use canned ready to use beans also.
Recipe for my black eyed peascurry is below..
.
Ingredients 
**To grind**
Coconut - 100g, fresh grated or finely chopped
Tomatoes - 2
Onion - 2  large cut into chunks
**For the curry**
Ground coconut, tomato  onion paste from above Ingredients 
Black eyed peas- 300g, ready to use
Green Chilli- 2
Tamarind extract - 4 tsp
Salt as needed
Turmeric powder- 1/4 tsp
Red Chilli powder- 1 tsp
Coriander powder - 1.5 tsp
Water as needed to cook
**To temper/tadka**
Sesame oil - 1 tbsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1/4 tsp
Peppercorns- 1/4 tsp
Fenugreek seeds- a few
Garlic - 2 cloves, peeled and sliced
Shallots- peeled and halved
Curry leaves - 1 sprig
Red Chilli powder - a pinch
.
Method
1. Prepare the beans so it is soaked, cooked, ready to use in curries 
2. Grind the coconut, tomato and onions. Extract tamarind juice if using whole tamarind
3. To a large pan or pressure cooker, add the beans, ground paste, tamarind, salt, turmeric,red Chilli and coriander powder. Cook for a whistle or 5 minutes on medium flame. If on pan cook for 15 minutes on medium flame
4. In a tadka pan, heat oil and let all the seeds crackle, fry Shallots, garlic until golden. Add the curry leaves and red Chilli powder 
5. Pour it onto the curry and simmer for five minutes
6. Enjoy hot with rice and side dishes like omelette, salads etc.,
