Strawberry Lychee Sorbet

If summer had a flavor, this Strawberry Lychee Sorbet would be it. Sweet, juicy strawberries and fragrant lychees come together in a beautifully refreshing frozen dessert that’s bursting with fruity goodness. The natural sweetness of ripe fruit is enhanced with a simple sugar syrup and a splash of fresh lemon juice, creating a perfectly balanced sorbet that is light, vibrant, and incredibly satisfying.

The fruit mixture is blended until silky smooth, strained for an ultra-smooth texture, chilled thoroughly, and then churned in an ice cream maker until irresistibly creamy. Ingredients

  • 400g fresh strawberries, hulled
  • 250g lychee flesh (fresh or canned, drained)
  • 120ml sugar syrup, cooled
  • 1 tbsp fresh lemon juice

For the Sugar Syrup

  • 100g sugar
  • 100ml water

Method

  1. Prepare the sugar syrup by combining the sugar and water in a small saucepan. Heat gently until the sugar dissolves completely. Allow it to cool completely.
  2. Add the strawberries, lychee flesh, cooled sugar syrup, and lemon juice to a blender.
  3. Blend until completely smooth and creamy.
  4. Pour the mixture through a fine-mesh sieve to remove seeds and any fibrous bits, creating a smoother sorbet.
  5. Chill the strained mixture in the refrigerator for at least 2–4 hours, or until thoroughly cold.
  6. Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft sorbet consistency.
  7. Transfer the sorbet to a freezer-safe container and freeze for 2–4 hours for a firmer texture.
  8. Scoop and serve chilled.

Notes

  • Use ripe, sweet strawberries for the best flavor and natural color.
  • Fresh lychees provide the most fragrant taste, but canned lychees work beautifully as well.
  • The lemon juice brightens the fruit flavors without overpowering them.
  • Allow the sorbet to sit at room temperature for 5 minutes before scooping if frozen solid.
