Sambar.. without which South India do not lunch! Kanji with onion pakoda.. Also known as congee in South Asian cuisine Kanji is the highest form of simplicity.
I started mine with leftover cooked rice that I fermented overnight with plain water. Then in the morning added fenugreek seeds, more water and few sliced garlic cloves and pressure cooked in the instant pot. With some fried onions it is the best breakfast one could ask for.
