Carrot poori from leftover carrot poriyal of yesterday.
Don’t know after how many days/months I slept in and wokeup late on a Saturday morning. Felt really good. Wanted to make a good breakfast(brunch) and was peeking in the fridge for ingredients.
Thought to use up the carrot poriyal somehow, and settled with adding it to the dough for poori.


And made Chana masala(I always batch cook 500g soaked Chana, divide into 2 or 3 in freezer safe bags/boxes) for side dish. Absolutely delicious.


I guess any poriyal which is the sautéed carrots, onion, curry leaves, mustard seeds, coconut, mild spices made in tamil style will work.
Just add the poriyal in the food processor fitted with chopper blade. Run it until you get a Pesto like consistency. Add the flour(whole wheatmeal) and salt. Add water as  needed to make a firm dough.
Divide the dough into lemon sized balls. Roll into poori and deep fry.
Serve hot with curry of choice.
