Besan Ka Halwa – Chickpea flour halwa – Gram flour halwa

Besan Halwa or Chickpea flour halwa or gram flour halwa is a Indian dessert, healthy dessert if I may say despite the addition of ghee(which is healthy too). In most parts it is also served as a breakfast!! Yeah.. breakfast. I was super surprised to know it too.. but one bite of it I am hooked!! I have made it about a dozen times so far.. and Iβm loving it.

Made lovingly Gluten-free, refined sugar free, refined fat free this dish is as healthy as the desserts come by.
I was also checking out the benefits of this halwa, because it is a winter staple at cold North Indian states. They make in big batches and enjoy it. Totally surprised to see it clears the nasal tract, gives relief for cold and cough and also helps in managing weight, because less carbs. No wonder they give the dish as prasadham or offering in temples in some places.

Chickpea flour or besan as you all know has less carbohydrates and has more protein and good fats. It is Gluten-free too.
Ghee gives warmth, battles cold and is again, a good fat.
Mostly made with sugar, my recipe uses Jaggery.
The recipe needs constant attention on the pan and takes about 15 mins of time, but it is worth it. Trust me on that.
Ingredients (serves 4)
Chickpea flour/Besan/gram flour β 2 cups
GheeΒ β 3/4 to 1 cup
Milk β 1 cup
Jaggery β 1 cup, powdered and melted with hot water
Nuts of choice
Method
1. In a thick bottomed pan, mix together the flour and the Ghee. Stir slowly. Will be thick in the start, but will loosen and become manageable.
2. Stir in low flame for 10 to 12mins until the flour colour is golden.
3. Slowly add the milk. It will get absorbed quickly. So mix well and add slowly.
4. Switch off the flame, wait for a minute and then add the melted jaggery water. Mix thoroughly. You can add while on heat, but doesnβt give the lovely texture I love.
5. Add nuts of choice, Almonds mostly, and serve hot.
6. Enjoy for breakfast
