Cardamom Blueberry Scones

Warm Scones for a cold evening with some tea or milk is always a pleasure I try to make it atleast once in a while. Or Scones for breakfast sounds great too.. When blueberries are available in market I try to get them for muffins, cakes, jam or like today Scones.
And to spice it all up, make the warm Scones warmer with cardamom is a new addiction. Get your mortar and pestle, get pounding from fresh cardamom seeds and add them to the dry ingredients. A little goes a long way.  So 2 pods will do for my recipe of 6 Scones.


If you see, my Scones a little on the flat biscuit like, I love them that way. Crispy on edges, soft and moist insides. Feel free to roll and cut as you like.
Also to serve with cream and jam is good, but a generous drizzle of honey with these warm cardamom Blueberry Scones is great. Try the recipe


Ingredients – Makes 6 scones
All purpose flour – 175g
Sugar – 45g
Baking powder – 1tsp
Salt – 1/4tsp
Cardamom seeds- from 2 pods
Unsalted butter- 75g
Milk – 75ml
Blueberry- 125g

Method
1. In a large mixing bowl add the flour, sugar, baking powder and salt
2. Crush the cardamom seeds into powder, not necessarily fine. Add to the flour mix.
3. Grate in the butter into the bowl and stir.
4. Pour in the milk and mix quickly with a spatula. It will be dry and crumbly. But that’s fine
5. Fold in the blueberries
7. Onto a parchment paper,transfer the contents of the bowl. Fold the paper for a few times so the dough comes together, you also get layers.
8. Slightly flatten or roll as you need and cutout 6 Scones.
9. Arrange on a baking tray and bake at 180°C preheated oven for 25 to 30 minutes.
10. Serve warm with honey or tea
