Ragi Murukku

Ragi Murukku.. finger millet is one of the healthiest Cereal with loads of vitamins, minerals and fibre in it. Adding it’s flour in daily cooking is good for health, and I try my best in adding it in dosai, idli, puttu, cookies, porridge and now in the super famous murukku.

Murukku is a deep fried crispy snack that is very famous in Tamilnadu. Usually made with rice flour, simple common spices, sesame seeds, this is one delicious crispy snack. I just replaced the rice flour with millet flour and added chickpea flour for extra taste. While I’m not an expert in using the snack press to pipe the dough directly in oil, I used flat wooden ladles to pipe the dough in and then carefully dipped the ladle in the hot oil instead of directly piping in oil like real experts. Shape doesn’t matter when the snack is crispy and yummy..

Ingredients
Ragi/ Finger Millet flour – 1 cup
Chickpea flour /besan – 3/4 cup
Salt – 1 tsp
Sesame seeds – 1tbsp
Turmeric powder – 1 /4 tsp
Red Chilli powder- 1/2 tsp
Ghee – 2 tbsp
Hot oil – 1 tbsp
Water to make dough
Oil to deep fry
Method
1. In a large mixing bowl add the flours, salt, spices and the sesame seeds. Mix with a fork or hand
2. Add the ghee and rub upto the flour until the flour is crumbly
3. Heat oil on the pan to deep fry, once the oil is hot take a tablespoon of it and add to the flour mix. Combine quickly
4. Add water to make a soft non sticky dough
5. Divide the dough into parts as needed to add to the snack press
6. Pipe the dough on to wooden ladle in shapes you like and deep fry until golden in all sides
7. Drain and cool on a tray or a cooling rack
8. Enjoy. Store in airtight containers once completely cooled
