Gluten Free Almond Butter Banana Bread

There seems to be no enough banana bread recipes one can have!! Ready for a super simple gluten free, refined sugar free and very delicious Almond butter banana bread?
The recipe is so simple and is batter is made in food processor. Dump all the ingredients, blend and bake. As simple as that..

This banana bread is no overly sweet since it is naturally sweetened with the ripe banana and the almond butter in that recipe. All you need to do is to ensure you have good organic quality almond butter. I used my homemade almond butter – that has only roasted almonds, salt and honey.
And the banana bread is gluten free. The recipe has a little oat flour but the flour is ground by me in the spice/coffee grinder with the certified gluten free oats. You can find spice grinder here and you can also use almond flour in place of oat flour.



This bread when out of the oven will be puffy, but on cooling will slightly deflate. But don’t worry about that, this banana bread will be so delicious.

Equipment
- Food Processor to make the batter
- Loaf tin for the cake
Ingredients
Wet Ingredients
- 2 Ripe Bananas
- 1/2 Cup [75 gms] Natural Almond Butter Honey or maple syrup sweetened is perfect
- 2 Eggs
- 1/4 Cup 50 ml Olive Oil
- 1/2 tsp Ground Cinnamon
- 1 tsp Vanilla Extract
Dry Ingredients
- 1/4 Cup 50 gms Oat Flour Gluten free or Almond meal
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
Optional Toppings
- 1 Sliced Banana
- 50 Gms Chocolate Chunks
Instructions
- In a food processor bowl add all the wet ingredients and blitz until smooth.
- Add all the dry ingredients and process again until you get a smooth batter.
- Pour the batter into a greased lined loaf tin.
- Arrange sliced banana and chocolate chunks on top if using them.
- Bake at 180 degrees Celsius for 30-35 minutes.
- Cool completely and slice.
- Enjoy for breakfast or as snack.
Notes
- Replace Oat flour with almond meal if you like.
- Use store bought almond butter if you have that – but homemade almond butter is great.
