Easy Rasam Recipe

Rasam. The essential spicy south Indian style soup, always served with hot rice in our home. It’s a part if the traditional meal, because of its warming spice presence is extremely good in aiding the digestion. The pepper, cumin and crushed garlic helps cure sore throat and also is the meal for all us during sick days, or just for days when we all need comfort food. Serve with an omelette this soupy rice is the best food ever.


Usually you’d see tomato rasam, pepper rasam, coriander rasam!! Buy guys, any rasam that doesn’t have any of the above ingredients is not really a rasam. So let’s call my recipe just rasam. It has all the necessary ingredients that a good rasam needs.


Ingredients
Sesame oil – 1 tsp
Mustard seeds – 1/2 tsp
Fenugreek seeds – a few
Curry leaves – 1 sprig
Garlic – 3 cloves finely crushed with peels on
Tomato – 1 large, Finely chopped
Green chillies – 2, slit or crushed based on spice preferences
Coriander leaves – a handful with stalks, cleaned and chopped finely
Turmeric powder – 1/4 tsp
Ground pepper – 1 tbsp
Ground cumin – 1/2 tsp
Red Chilli flakes – 1/2 tsp
Paruppu Podi/ idli podi/gun powder – 1 tsp
Coriander powder – 1/2 tsp
Asafoetida- a large pinch
Tamarind extract – 1 tbsp
Water – 3 cups or more as needed
Coriander leaves for garnish

Method
1. In a large sauce pan, heat the oil. Crackle some mustard and Fenugreek seeds. Add the curry leaves and garlic. Saute well
2. Add the Tomato, chillies, coriander leaves and all the spices. Mix well
3. Add the tamarind water and the water as needed. Cook in very low flame for 10 minutes until the soup is foamy, but not boiling
4. Mix well, enjoy with rice. We usually filter off the garlic, leaves etc and take only the soupy clear liquid, which is flavorful enough
