Spring Onion Paratha

Spring onion Paratha. Greens are best had with breads!! Yes.. I like them better with parathas and when served with side dishes/curries of their choices kids love them without complaining!! My kid does  at least and just gobbles up hot rotis with paneer curry and makes no notice of the greens and spices in the roti which otherwise will be loudly protested when served by themselves.
So a win win for me, I just grate in seasonal vegetables including winter greens like radish greens, spinach or in this fresh Spring onions in the flour with basic spices, make a dough, roll into parathas, and cook in ghee.
Love it.. with any simple curry or just with pickle!

Ingredients
Whole wheat flour – 1 1/2 cups
Spring onions – 1 cup, chopped
Garlic – 3 cloves, minced
Salt – as needed
Sesame seeds – 1 tbsp
Ground pepper – 1 tsp
Red Chilli powder- 1/2 tsp
Turmeric powder or fresh turmeric- 1/2 tsp
Cumin seeds – 1/2 tsp
Olive oil – 1 tsp
Water to make dough
GHEE to cook the parathas

Method
1. In a large mixing bowl or in mixer or  food processor add all the ingredients except ghee and water and mix
2. Add water slowly just enough to make a smooth dough
3. Divide into 12 balls. Roll the dough balls into round parathas (use a round cutter if you are like me)
4. Cook in hot tawa on bothe sides and smear ghee once cooked
5. Enjoy with curry of choice and pickle
