- 3 Ripe Banana Save one for topping if using
- 3/4 Cup [75g] Soft Brown Sugar
- 4 tbsp Pure Dates Syrup
- 1/2 cup [60 ml] Vegetable oil
- 2 Large Eggs
- 1 tbsp Vanilla Extract
- 1 1/2 Cup [175g] All Purpose Flour Or GF as you like. All will work
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 12 Deseeded Dates like Medjool or Ajwa [Chop and slightly dust with flour]
Instructions
- In a large bowl mash the bananas.
- Add the sugar and the dates syrup. Mix well.
- Add the oil, eggs and the vanilla extract. Mix well.
- Sift in the flour, baking powder, baking soda. Add the salt and mix well. The batter will be kind of thick. But that is okay, it is a bread.
- Add the chopped and flour dusted dates. Fold them in the batter.
- Transfer the batter to a lined and greased loaf pan. Spread the batter evenly.
- Place the halved remaining banana and some more dates on top.
- Bake in a preheated oven of 180 degrees Celsius for 45 to 50 minutes until done.
- Cool slightly and slice.
- Serve warm with tea. Enjoy
Notes
- Gluten free flour can be used
- Don’t forget to dust the chopped dates. They help in preventing the dates from sinking in the batter and gives beautifully dates studded slices.
- Brush the banana on top after baking with honey or dates syrup if needed, so they don’t shrunken.
