Making Popsicle at home is always fun. It is like you can make Popsicle out of almost almost any fruit, any addition of ingredients. It’s that simple. There have been times I had just frozen some fruit juice in Popsicle mould and enjoyed them cold. Times have changed and my ice cream game has changed too. Lots of trials, lots of reading and testing them I have the best Mango Popsicle recipe here. My easy creamy Mango Coconut Ice Popsicles.

The recipe is just blend, pour and freeze type. No cooking involved, all ingredients fresh and delicious.

These mango Popsicle is not icy, you know like a melt on your face and down your chin type. But a very creamy Popsicle recipe that will hold its shape a little longer than your regular ones all thanks to COCONUT MILK.

The coconut milk gives an unbeatable flavor that when combined with mango will result in a creamy, every bite or lick super delicious.

The sweetener used in my recipe is SWEETENED CONDENSED MILK. But if you want it all natural, try honey. Will be great as well.

how will you make these Mango Coconut Ice Popsicles taste balanced?!!

We use LEMON JUICE!! Yes… I don’t know what it does really, but the lemon juice rounds up all the other ingredients, enhances the mango taste and elevate the coconut flavor.

Looking at the photos here, I’m sure you want to know about the moulds used. I didn’t use the traditional ice lollies mould but some silicon muffin cups. Yeah, because I wanted try new ways of doing Ice Popsicles. They work always, being them silicon and all. Popping them out is way easier than the normal ice Pop moulds. YOU SHOULD TOTALLY TRY my method of making Ice Popsicle in silicon moulds.

Equipment

  • Ice Pop Moulds or Silicon cups with Pop Sticks

Ingredients
  

  • 1 Ripe Sweet Mango Peeled and cut into pieces
  • 1 Cup Coconut Milk Canned or thick homemade milk
  • 1/4 Cup Sweetened Condensed Milk Or Honey
  • 1/2 Lemon Juiced

To Garnish

  • Few Mint Leaves
  • Pink Rock Salt

Instructions
 

  • In a blender Jar or in a hand blender jar add the mango, coconut milk and the condensed milk.
  • Blend until thick and creamy,
  • Add the lemon juice and blend again.
  • Pour the mixture evenly in the ice moulds. If using muffin moulds, put the stick on the middle. If using the pop moulds, put the pop sticks.
  • Freeze until solid, at least 4-5 hours.
  • Pop them out of the moulds and serve cold..
  • Enjoy

Notes

  1. Use honey in place of condensed milk if you like it all natural.
  2. Use any mould you like or in a simple box to freeze the fruit mixture. It is creamy enough to be scooped up and eaten.
  3. Slightly sprinkle some salt when you are serving, optional.
