Spicy Chilli Garlic Pickle

A super simple recipe of garlic fry in loads of spice and sesame oil. These fried garlic in spicy chilli garlic pickle is only strong garlic lovers. It is a flavor bomb that you can add in almost everywhere you use garlic with the extra deliciousness that comes from the spice and sesame oil, which preserves the fry for up to 3 weeks if stored well . Spicy Chilli Garlic Pickle
Equipment
- Clean dry glass jar
- Cast Iron kadai or pan
- Spice Grinder
Ingredients
- 100 gm Garlic Peeled small garlic is the best
- 3 tbsp Sesame Oil
- 1 tbsp Salt Powdered sea salt if you have
- 1/4 tsp Turmeric Powder
- 1 tsp Red Chilli Powder
- 1 Pinch Asafoedita
- 1 tsp Black Mustard Seeds
- 1/4 tsp Fenugreek Seeds
Instructions
- Heat the iron pan.
- Dry roast the fenugreek seeds and the mustard seeds until fragrant without burning them. Switch off the flame.
- Slightly cool and powder them in a spice grinder or in a pepper mill.
- Heat the pan again and add the sesame oil.
- Add the peeled garlic and salt. Fry until the garlic looks fried but not brown.
- Add the turmeric powder, red chilli powder and the asafoedita. Switch off the flame immediately. Mix well.
- Add the ground fenugreek and mustard seeds. Mix well.
- Cool completely and store in a clean glass jar.
- Use in all the recipe that needs garlic – garlic with a spicy twist.
Notes
- Use small garlic. If using large ones, cut into pieces and dry them with a kitchen towel.
- Use sesame oil for maximum flavor.
