Spiced Frangipane Apple Galette

For all the fall or autumn lovers reading this post, this recipe is for you. A wonderfully warm and spiced almond cream slathered on a butter-y crumbly tart base, fresh sliced apples and the crunch from the almonds. This treat is for you – Spiced Frangipane Apple Galette.
How to make Spiced Frangipane Apple Galette!
The recipe has four parts.
- Make the butter-y crust
- Make the spiced frangipane – Almond cream
- Slice the apples
- Arrange the galette and bake.

The easiest part is arranging them as a free formed tart., that is the galette.
Making a galette is my favorite way of making tarts. You don’t have to worry about the shape, any breaks in the crust. Just pure delicious tart is the final result.

Ingredients
- For the Crust
All Purpose Flour – 1 Cup [110g]
Whole Wheat Flour – 1 Cup[110g]
Brown Sugar – 3 tbsp
Salt – 3/4 tsp
Any Spice Mix – 1 tsp [ I used the Pumpkin spice mix] [Use ground cinnamon, a little cardamom powder, ginger – whatever spice you like]
Unsalted Butter – 3/4 Cup
Egg – 1 [Optional] Or cold water if you like.
- Spiced Frangipane
Softened Unsalted Butter – 3/4 Cup
Almond Meal or Ground Almonds – 1 1/4 Cups
Egg – 1
Brown Sugar – 1 Cup or Regular Sugar
Vanilla Extract – 1 tsp
Any Spice Mix – 1 tsp [ I used the Pumpkin spice mix] [Use ground cinnamon, a little cardamom powder, ginger – whatever spice you like]
- Apple Filling
Apples of Choice – 4, sliced thinly
- Egg wash
Egg – 1, whisked
Sliced Almonds
Directions
- Make the Crust
- In a large bowl or in a food processor bowl add the flours, sugar, salt and the spices. Mix well.
- Add the unsalted butter – pulse or rub into the flour mix until crumbly.
- Add the egg if using or a couple tablespoons of cold water and mix until a buttery dough is formed.
- Chill for 20 minutes.
- Roll the dough into a wide 12 inches circle[Shape need not be perfect] between two parchment sheets or use flour to avoid sticking.
- Chill until you are ready to assemble the galette.
- Make the Spiced Frangipane
- Add all the frangipane ingredients and mix until fluffy and creamy.
- Assemble and bake the galette
- Leaving out a margin of about 1 1/2 inches, mark a circle in the rolled crust.
- Spread the spiced frangipane thick inside the circle.
- Arrange the sliced apples on top of the frangipane.
- Fold the crust on the sides and form the galette.
- Egg wash the sides.
- Sprinkle the almond slices on top.
- Bake in a preheated oven of 180 degrees Celsius for 40-50 minutes until golden.
- Serve warm with ice cream.
