A super delicious simple masala egg roast recipe made with simple pantry ingredients and is the best of the side dishes for all your Indian lunch parties.

Ingredients

  • Eggs – 4

  • Olive Oil – 1 tsp

  • Garlic – 2 cloves[Crushed]

  • Water – 3 tbsp

  • Salt – 1/2 tsp [Adjust as needed]

  • Turmeric Powder – 1/4 tsp

  • Red Chilli Powder – 3/4 tsp

Directions

  • Hard boil the eggs – about 10-12 minutes and peel them. Halve them.
  • In a small mixing bowl add the water, salt, turmeric and red chilli powder. Mix well and keep it ready.
  • Heat a frying pan and add the oil.
  • Add the crushed unpeeled garlic cloves and until until slightly bronwed.
  • Add the spice mix water carefully along the sides. It will splatter – so do it in low flame.
  • But the oil and the spice mix come to boil, place the eggs cut side down.
  • Cook for a few minutes and carefully flip. Cook for 1-2 minutes until the water evaporates and you get the roasted eggs.
  • The eggs are ready. Serve hot with rice of your choice

Notes

  • These eggs keep well for 1 day and is travel friendly. You can prepare and take them for picnics or tours as side dish.
  • Adjust spice as needed.
