Kids friendly Chickpeas Fried Rice

Chickpeas Fried Rice, tamil style variety rice that is a perfect kids friendly lunch box dish. Qhen I was a school going kid I was happy to take rice and yogurt everyday with a side dish. But my mom packed loads of varieties filled with vegetables and greens mostly. I loved them all..
But my kid demands curd rice(rice and yogurt) everyday, and won’t meekly accept my attempts at packing anything else. So it has been hard for me to come up with what to pack him for lunch everyday. And he is kind of is picky about green leaves too. So I had to tweak, modify general dishes to suit him and prepare things. Most days I don’t mind, sometimes it is frustrating. But it’s fine as long as he eats and brings back an empty lunch box. So today I want to share one of the most packed lunch for him, the protein loaded chickpeas Fried Rice. It is a modification of the traditional coconut rice, just kids friendly and added cooked chickpeas. Finally picked out the leaves and Chilli

Ingredients
Olive oil – 1 tsp
Mustard seeds – 1/4 tsp
Curry leaves – 1 sprig
Dried Red Chilli- 1
Onion – 1 small, sliced finely
Garlic – 1 clove, minced
Cooked chickpeas – 1/2 cup
Cooked rice – 1 cup
Salt as needed
Method
1. Heat a pan, add oil and crackle the mustard seeds. Add red Chilli Curry leaves, onion and garlic. Saute well until onion is browned
2. Add the cooked chickpeas, salt and saute well
3. Add the cooked rice, cook in medium flame until the rice is thoroughly Fried and mixed
4. Slightly cool and pack for lunch with chips and raita
