Easy Mango Crumble Bars

Easy one bowl recipe that has both the base and crumble covered with 1 recipe, all easily available pantry ingredients. This mango crumble bar recipe has 6 ingredients of which two are fruit components.
I’m sure the fruit ingredients can be switched, and you can make any fruit crumble bars. But you see, I’m mango obsessed!! I ‘ve added more than 10 mango recipes this year in the blog and more are coming by your way as soon as I plan and test the recipes.
Back to these easy mango crumble bars, below are the reasons why you must try this recipe..

4. You can save the recipe and reuse it for any fruit combination. Berries, apples, apricots, peaches, all will work wonderfully.
5. Made with an all butter crust, that gives you the perfect melt in the mouth texture every time.
6. The jam and fresh mango filling upon baking is so delicious, you must try this recipe with mango jam [I used pineapple mango jam, that is homemade] and freshly cut mango.
Recipe is as below: Making Easy Mango Crumble bars is the perfect way to make use of the seasonal mango and enjoying the summer makes 9 bars:

Ingredients
1. All-purpose flour – 300g
2. Castor sugar – 70g
3. Unsalted butter – 125g [cold and cubed]
4. Salt – a large pinch
5. Mango jam – 75g
6. Fresh mango – peeled, cubed 125g [about 1 large mango]
7. Cardamom power – optional
Method:
1. In a mixing bowl, add the flour, sugar, salt, cardamom powder [if using] and stir.
2. Add the butter and rub/cut with a pastry cutter. Mix sparingly, rub the butter with the flour to make the crumble. You should be able to see pieces of butter. So, don’t overwork the mixture.
3. Add a couple teaspoons of cold water and bring together the crumble.
4. In a lined square pan put 3/4th of the mixture and press down. Use a parchment paper to press evenly if you have it. Easier that way.
5. Add the jam and spread it all over the pressed crust.
6. Add the mango cubes and spread evenly.
7. Crumble the remaining crust mixture and put them all over the fruit mixture.
8. Bake in a preheated oven of 180°C for 35-40 minutes.
9. Slightly cool before slicing.
10. Serve with mango curd or cream or simply take a bar in your hand and have a bite. Enjoy!

- Parchment paper for lining the pan
Ingredients
