Vegan Apple Berry Cobbler.. aka Sunday treat for you and your family.
So simple and a stunning dessert all ready under an hour is perfect for brunch too if you like it!

Vegan Apple Berry Cobbler

Ingredients
  

  • Filling
  • Apples – peeled cored and sliced or cubed – 4
  • Blackberries- 100g
  • Cranberries – 50g
  • Sugar – 50g
  • Cornstarch- 2tbsp
  • Salt – 1/2 tsp
  • Lemon Juice – 2tsp
  • Biscuits
  • All purpose flour – 100g
  • Sugar – 30g
  • Frozen and sliced coconut oil – 50g
  • Baking powder – 3/4 tsp
  • Salt – 1/2 tsp
  • Cold Almond milk – 3tsp

Instructions
 

  • Add all the ingredients of the filling in your baking dish, mix well and keep aside.
  • In a mixing bowl combine the flour, sugar, baking powder,salt. Mix well
  • Add the frozen coconut oil,cube like butter if you would and make a crumbly mixture.
  • Add almond milk slowly, you may not need all 3tsp if it, so carefully mix just until the dough come together.
  • Dump the dough onto a large parchment paper. Fold in and out laminating the dough. This step is optional. But for a flaky pastry, try it
  • Pat the dough and cutout the Biscuits in your favorite shape.
  • Arrange the cutout Biscuits on top of the fruit filling. Sprinkle some sugar on top the Biscuits.
  • Chill in the freezer while you preheat the oven at 180°C.
  • Bake for 45 to 50 minutes until the fruit is bubbling and the Biscuits are golden in color.
  • Enjoy with vanilla ice cream
