I have a cheat’s recipe that tastes just like rasamalai and guess what!? it is super simple and can be done in just 15 minutes. Instant Pot suji kheer /Samba Ravai Kheer.
Making this recipe in instant pot in fact will take only 10 minutes provided you have all the ingredients and hot milk. Yeah, instant pot gets into pressure cook mode soon if your ingredients are hot enough in the pot and it doesn’t have to heat the liquid and then go to the pressure cook mode after heating it.

And back to the recipe, replace semolina with broken or whole rice, or steel cut oats even. But it will very much look like a fancy oatmeal with saffron and all. Feel free to use any grain you like – I used cracked wheat, called samba ravai in tamil. Whatever the grain, ensure it is broken evenly to get the kheer evenly cooked and takes the time as mentioned in the recipe.
Also, have this kheer warm or cold as you like. Store in refrigerator for 2-3 days in small containers and consume whenever the cravings hit you. The saffron as it gets infused in the kheer will greatly enhance the taste and go slightly heavy handed with the nuts – just like I do in my recipe.
