Ever craved rasamalai in the middle of the night and no availability or no interest in making it from scratch so you let go of the idea and go without? No worries.. I have a cheat’s recipe that tastes just like rasamalai and guess what!? it is super simple and can be done in just 15 minutes. Instant Pot suji kheer /Samba Ravai Kheer.

Making this recipe in instant pot in fact will take only 10 minutes provided you have all the ingredients and hot milk. Yeah, instant pot gets into pressure cook mode soon if your ingredients are hot enough in the pot and it doesn’t have to heat the liquid and then go to the pressure cook mode after heating it.

And back to the recipe, replace semolina with broken or whole rice, or steel cut oats even. But it will very much look like a fancy oatmeal with saffron and all. Feel free to use any grain you like – I used cracked wheat, called samba ravai in tamil. Whatever the grain, ensure it is broken evenly to get the kheer evenly cooked and takes the time as mentioned in the recipe.

Also, have this kheer warm or cold as you like. Store in refrigerator for 2-3 days in small containers and consume whenever the cravings hit you. The saffron as it gets infused in the kheer will greatly enhance the taste and go slightly heavy handed with the nuts – just like I do in my recipe.

Equipment

  • Instant Pot

Ingredients
  

  • 1/4 Cup [30 Gms] Semolina / Cracked Wheat [ Samba Ravai]
  • 2 Cups Milk of choice about 750 mils Hot milk preferably
  • 1/2 Cup Water
  • 1/4 Cup Sugar White granulated
  • 2 tsp Ghee clarified butter
  • 8-9 Chopped Cashew nuts
  • Sliced Almonds or pistachios As needed
  • 4-5 strands Saffron
  • 2 Pods Cardamom
  • 1 Pinch Salt

Instructions
 

  • Set the instant pot to saute mode.
  • Add the ghee and the cashew nuts
  • Roast until golden.
  • Add the cardamom pods and the semolina. Stir until coated with ghee.
  • Add the sugar.
  • Add the milk, water and the saffron strands. Mix well.
  • Cancel the saute mode.
  • Close the instant pot lid and secure the pressure valve. Set the cooking mode as manual cooking and time to 4 minutes.
  • Relax and let it cook.
  • Open the lid once the pressure is released.
  • Add the almonds and the pistachios. Stir well.
  • Serve warm or cold as you like.
  • Enjoy.

Notes

  1. Use any broken/cracked grain of choice. Rice, wheat or oats work well.
  2. Use milk of choice. Non-dairy milk will work as well.
  3. Replace sweetener with coconut sugar. It will taste amazing.
  4. To serve it cold, keep in refrigerator and serve when needed.
