Easy Carrot Halwa ||Gajar Ka Halwa

Carrot halwa.. the best ever seasonal comfort food. Yes..  while we get carrots throughout the year, winter carrots are super special and more fresh. Definitely calls for some warm dessert.. don’t you think?


There is nothing more comforting than a bowl of this grain free, gluten free, decadent , creamy dessert on a cold evening. This carrot halwa is super creamy, very delicious. Although made with only a handful of ingredients you may have spend some 30 to 40 minutes in the kitchen to get this goodness. But it’s totally worth it, trust me. Two quick tips when making carrot halwa
1. Use a seasoned iron wok or pan. Helps with non stick part.
2. Use a silicon spatula or a wooden one. And leave it on the pan with milk. This helps in avoiding milk spillover and gives a rest to your arm from constant stirring.


Recipe is below
.
Ingredients – Serves 4
Grated Carrots – 500 g, peel and grate
Milk – 600ml
Sugar – 100g
Ghee – 3tbsp
Chopped Almonds and Pistachios – 1/4 cup
Cardamom pods or powder – 1/4tsp

Method
1. Heat an iron pan and add a tbsp of ghee
2. Add the grated carrots and saute well for 3 minutes
3. Addthe cardamom pods/powder and all the milk. Let it simmer until all the milk is absorbed and the carrots are soft. See tips to avoid constant stirring. Will take 20 to 30 minutes
4. Add the sugar and stir well. Mix until the sugar melt and the carrot mixture thicken again. About 5 minutes
5. Add the remaining 2tbsp ghee and stir. Watch for the telltale non sticky halwa texture where you see the ghee on the sides coming out and the halwa moves freely without sticking to the pan
6. Add the nuts and stir well.
7. Serve warm in bowls.
