Shortbread Linzer cookies

Shortbread Linzer cookies with hot chocolate for breakfast is just fine, because Christmas is around the corner and holidays are coming!!
For all who are getting holidays and celebratingβ¦
Sandwiching soft crumbly cookies with your favorite jam and dusting with icing sugar to elevate the festive mood and dipping this in an equally heavenly hot chocolate is a super feel, especially if you have made it all on your own and are enjoying it, it is a totally different level of joy!
Recipe for my shortbread linzer cookies is below

Ingredients
Unsalted Butter β 150g
Super fine Sugar or Icing Sugar β 100g
All Purpose Flour β 200g, extra to dust
Egg β 1
Vanilla Extract β 1tsp
Almond Extract β 1tsp
Salt β 1/4 tsp
Jam of choice to sandwich cookies β 1 cup
Icing sugar to dust
Method
1. In a mixing bowl, cream together the butter, salt and sugar until Fluffy.
2. Add the egg, vanilla and Monday extracts and combine.
3. Fold in the flour and for a dough. Do not over work.
4. Divide into two discs and cover in cling film or parchment paper. Chill at least for 30 minutes.
5. Roll in to a large disc, dust with flour as needed, cutout cookies in your favorite cookie cutter. Reroll amd repeat for scraps. Arrange in a baking tray with enough space to not crowd the tray.
6. Use a smaller cutter to cutout top cookies, lid of the sandwiches for half of the cookies from step 5.
7. Bake in a preheated oven of 180Β°C for 12 to 15 minutes.
8. Let cool COMPLETELY on a wire rack.
9. Dust thoroughly the top layers with icing sugar.
10. Spread some jam in the bottom cookies, and close it with the sugar dusted top lids.
11. Enjoy..
