Small Batch Chocolate Banana Rye & Rolled Oats Muffins

Have one ripe leftover banana, an egg, some rye flour, cocoa powder and rolled oats? You can very well make these small batch banana rye and rolled oats muffins.
They are tasty, healthy and so simple. This recipe makes just enough for breakfast – about 3 regular sized muffins and if you have an air fryer, more simple. Breakfast muffins ready in 15 minutes from start to end. Even without an air fryer, these delicious and healthy muffins takes only about 20 minutes in the oven.

Using rye flour is a choice you can skip and use regular all purpose flour or gluten free mix if that is what you have. No stopping home baking due to silly reasons like you don’t have the flour the recipe calls for!
The recipe calls for vegetable oil – Any oil or just simply melted butter will also work.
Use the cocoa powder if you have, else skip it.



You see, all the ingredients are almost swap – able. That’s why I use this recipe a lot and make three muffins – one for each of us.

Small Batch Chocolate Banana Rye & Rolled Oats Muffins
Equipment
- Air Fryer Or Oven to Bake
Ingredients
- 1 Ripe Banana
- 1 Whole Egg
- 1/2 Cup Brown Sugar
- 1/2 Cup Rye Flour Any Flour you have.
- 2 tbsp Milk of choice
- 1/4 Cup Vegetable Oil
- 1/2 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1/4 tsp Salt
- 2 tbsp Cocoa Powder
- 3 tbsp Rolled Oats Divided
- 1 tsp Vanilla Extract
- 1/2 tsp Ground Cinnamon Optional
Instructions
- In a mixing bowl peel and mash the banana with a fork.
- Add the sugar and mix well.
- Add the egg, vanilla extract, oil and combine well.
- Add the flour, baking powder, baking soda, cocoa powder, ground cinnamon, salt. Mix just until combined.
- Add the milk to loosen up the batter.
- Add half of the oats into the batter. Mix well.
- Divide the batter into three lined or silicon muffin moulds.
- Sprinkle the remaining oats on top of the muffin batter.
- Bake at 180 degrees Celsius for 20 minutes. Else Air fry for 12-14 minutes.
- Enjoy warm for breakfast with milk.
Notes
- Use any flour you like.
- Skip the oats if you don’t want and use any toppings like choco chips, nuts or sprinkles as you like.
- Use milk of choice. I used whole fat cow milk.
- Bake or air fry as per availability.
