The recipe calls for very less granulated sugar. All you will need to aid with sweetness are super ripe bananas. Skip sugar on the muffin batter and sprinkle some sugar on top to get crunchy sugary top. Or replace granulated sugar with brown sugar in the batter.

How to make easy chocolate chip banana muffins?

Mash the banana with a fork. Ensure you use very ripe bananas. This will help in the natural sweetness I was saying above about. Add sugar if using, add the eggs and the oil. Yes, the recipe uses olive oil that goes really well with bananas. No butter, no waiting for it come to room temperature and no whisking it until soft and creamy. Just mix with a fork or a hand whisk as you add the ingredients as you add.

Then add a little vanilla and a little ground cinnamon, a table spoon of yogurt and that’t the wet ingredients done. Add the flour, baking powder, baking soda, salt and combine them all. That’s the muffin batter done.

Easy Chocolate Chip Banana Muffins

Recipe of simple, delicious Banana muffins loaded with gooey Chocolate Chips and made in one bowl that makes exactly six normal sized muffins.

Ingredients
  

  • 2 Ripe Banana
  • 2 tbsp Brown Sugar Optional, skip if you don’t want added sugar in batter.
  • 2 Eggs
  • 2/3 Cup Oil I used Olive Oil.
  • 1/2 tsp Ground Cinnamon Optional
  • 1 tsp Vanilla Extract
  • 2 tbsp Yogurt Use Buttermilk, if you have.
  • 1 1/4 Cup Flour About 175 grams
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 Cup Chocolate Chips
  • 3 tsp Granulated Sugar To sprinkle on top – optional

Instructions
 

  • Add the brown sugar if using.
  • Add the eggs, oil, yogurt and the vanilla. Add the cinnamon if using. Mix well.
  • Add the flour, baking powder and the baking soda. Combine just until they are mixed.
  • Fold in the chocolate chips.
  • Divide the batter into six muffin holes, lined with paper cups.
  • Sprinkle half teaspoon of sugar on top of each of the muffins.
  • Bake at 180 degrees Celsius for 25-30 minutes.
  • Serve them warm.

Notes

  1. Use any oil you like in the recipe.
  2. Add chocolate chips or chunks as available.
  3. Do not over work the flour and the wet ingredients. Skip sugar altogether if you want to bake sugar-free banana muffins.
