Mash the banana with a fork. Ensure you use very ripe bananas. This will help in the natural sweetness I was saying above about. Add sugar if using, add the eggs and the oil. Yes, the recipe uses olive oil that goes really well with bananas. No butter, no waiting for it come to room temperature and no whisking it until soft and creamy. Just mix with a fork or a hand whisk as you add the ingredients as you add.
