Paneer Pav Bhaji.. Leftover veggies need to be eaten, Summer is here, milk goes bad when left out even an hour and that needs to be boiled and made into paneer, a little crumbly since homemade. Put them all together, add some spices and pav bhaji masala, toast some bread(mine in the pic is the seeded whole wheatmeal sourdough) Enjoy!!!

Ingredients
Mixed veggies – 2 cups, steamed or boiled and  (carrots, beans, green peas, boiled potatoes)
Onion – 2, chopped
Tomato- 2, chopped
Capsicum – 1, chopped
Oil – 2tsp
Butter – 1tsp
Ginger garlic paste – 1tsp
Salt – as needed
Turmeric powder – 1/2 tsp
Red Chilli powder- 1tsp
Coriander powder – 1tsp
Pav bhaji masala – 2tsp
Lemon juice – 1 tsp
Water – 1 cup
Crumbled Paneer – 1cup
Coriander leaves – chopped
Toasted Bread to serve

Method
1. Heat a pan, add the oil and the butter
2. Add the chopped Onion, ginger garlic paste. Saute well
3. Add the Tomato and the Capsicum. Saute
4. Add the boiled veggies, salt, turmeric, chilli and Coriander powder
5. Add the pav bhaji powder and mix well. Add the water to slightly thin the mix and simmer for 15 minutes or pressure cook for 5 mins in instant pot
6. Add the crumbled paneer and mix. Cook for a few minutes
7. Add the lemon juice and chopped Coriander, mix well
8. Serve with buttered toast and chopped onions and lemon
