One pot Egg Vermicelli ||Egg Semiya || Egg pasta.
Only pasta I love and like to make. Not a fan of other pasta varieties. This Vermicelli pasta with eggs is very simple one pot recipe. You can make it all in one pot and serve it, all under 20 minutes.

Tips to make the best One pot Egg Vermicelli ||Egg Semiya || Egg pasta always

1. Always use dry roasted Vermicelli for best results.. like you need non sticky, non clumpy pasta! Yes?
2. When you are sautéing the onions and ginger garlic paste your pan will surely catch in the bottom. To avoid it add water , a little splash at a time and saute. This will help cook the onions faster too.
3. Don’t stir aggressively after adding eggs. We need poached eggs, almost whole in shape.
4. 1 cup of Vermicelli, 2 cups of water is the ratio.
5. Add eggs and Vermicelli only after after water comes to boil.

Ingredients
  

  • Roasted Vermicelli – 200g
  • Olive oil – 2 tsp
  • Ginger garlic paste – 1 tsp
  • Onion – 2 Sliced
  • Tomato – 1 small chopped
  • Green chillies – 2
  • Coriander leaves – chopped
  • Salt – as needed
  • Turmeric powder – 1/2 tsp
  • Red Chilli powder – 3/4 tsp
  • Eggs – 4
  • Water – 400 ml to 450 ml

Instructions
 

  • Heat a wide pan or pot. Add the oil.
  • Once hot add the Sliced onions and the ginger garlic paste. Saute until translucent.
  • Add the tomatoes, chillies and half of the Coriander leaves. Saute.
  • Add the salt, turmeric powder and Chilli powder.  Stir once and add the water.
  • Let it all come to boil.
  • To the boiling mixture, add eggs one by one, ensure not to overcrowd them, do like one egg at one corner. Let them cook for 2 minutes.
  • Add the roasted Vermicelli to the pan and make sure it is all covered in the egg mixture.
  • Simmer and cook for 5 minutes with the lid on.
  • Egg Vermicelli is ready to be served hot with raita or pickle.
