Ingredients
Roasted Vermicelli - 200g
Olive oil - 2 tsp
Ginger garlic paste - 1 tsp
Onion - 2 Sliced
Tomato - 1 small
chopped
Green chillies - 2
Coriander leaves - chopped
Salt - as needed
Turmeric powder - 1/2 tsp
Red Chilli powder - 3/4 tsp
Eggs - 4
Water - 400 ml to 450 ml
Instructions
Heat a wide pan or pot. Add the oil.
Once hot add the Sliced onions and the ginger garlic paste. Saute until translucent.
Add the tomatoes, chillies and half of the Coriander leaves. Saute.
Add the salt, turmeric powder and Chilli powder. Stir once and add the water.
Let it all come to boil.
To the boiling mixture, add eggs one by one, ensure not to overcrowd them, do like one egg at one corner. Let them cook for 2 minutes.
Add the roasted Vermicelli to the pan and make sure it is all covered in the egg mixture.
Simmer and cook for 5 minutes with the lid on.
Egg Vermicelli is ready to be served hot with raita or pickle.
