Easy Potato Wedges Sandwich

Easy Potato Wedges Sandwiches for the easy lunches or snacks. So the Ramzan month has begun and while my kid is enthusiastic about the fasting, we don’t encourage kids to do fasting everyday and he has normal mealtimes at home.
During times like these it is so fun and a little frustrating to put together food only for the kids. But like I said it is fun too,.. gives your more time to plan and plan something the kid likes to eat is double the success.
These potato wedges are one such recipe.. very easy to put together and the kids love it too!! Because… POTATO!!!

Recipe is below
Ingredients
Potato – 2 large ,cut into wedges
Olive oil – 1tsp
Salt – as needed
Bread crumbs – 1tbsp
Ground Pepper – 1tsp
Chilli powder- 1tsp
Mixed dried herbs – 1tsp
Garlic cloves- 2, minced
Bread of choice – 4 slices
Mayonnaise – 1/4 cup
Lettuce – 8 leaves, cleaned
Dipping sauce of choice to serve
Method
1. Preheat the oven or air fryer while you mix the potatoes with spices
2. In a bowl add the potato, salt, olive oil, pepper, Chilli, bread crumbs, garlic, herbs and toss well
3. Spread on a single layer and bake at 170°C for 15 minutes. Turn once in between
4. Increase the temperature to 200°C and cook for 7 more minutes until crispy
5. To make the sandwich, spread the Mayonnaise on the bread slices
6. Arrange the lettuce leaves and the baked wedges and close with another bread slice
7. Cut in halves and serve with sauce of choice
