Easy Peanut Butter Souffle

Souffle is an egg based baked dish that can be savory or sweet. Knowing me. I make it only sweet and easily.
Easily how??!! By a cheatโs method โ yes, not interested in a lot of steps and ingredients. Sometimes all of us have to stick to the easy way, especially when baking and you want a quick fix of sweets with familiar taste and texture but less time in kitchen.
If you are in a similar situation like me, wanting a fancy dessert but easily made you have come to the right place. To the recipe of EASY PEANUT BUTTER SOUFFLE for two. Double or triple the quantities as needed.

This recipe is so easy and will come together in no time at all. Only work you have to do is whisk the egg whites until almost stiff. The rest is all mix and bake!! So easy, So good.
There are 3 major ingredients in the recipe โ all 3 are pantry staples. I think I thought of this recipe out of necessity mostly. Quarantined and in lock down, couldnโt go the the stores often and I had to make do with what I have in the pantry most of the times. Iโm sure you are too.. So this familiar tasting souffle is more of a comfort dish made with comforting simple ingredients.

Please note the rise in this peanut butter recipe is not as high as the common souffle has โ after all it is a customized easy version. But always works with a soft interior, airy and crispy top.
So the ingredients are simple โ
- Peanut Butter โ Use smooth peanut butter, for better incorporation and good rise. I havenโt tried with crunch peanut butter, so check before you try this recipe.
- Brown Sugar โ Again, this recipe is gluten free, dairy free and slightly healthy. So use brown sugar. But if you donโt have it in your pantry, use regular granulated sugar.
- Eggs โ You need to separate the egg yolks and whites for this recipe. The egg whites are the raising agent of the recipe, so they need to be whisked until soft airy peaks are formed. IF you miss this step, it will be like eating flour-less peanut butter cookie, not a soft slightly gooey souffle.

Easy Cheatโs Peanut Butter Souffle
Equipment
- Electric hand whisk or hand whisk
Ingredients
- 120 gms Smooth Peanut Butter
- 60 gms Brown Sugar
- 2 large Eggs Separated
- 1 tsp Vanilla Extract
- 1 Large Pinch of Salt
Instructions
- In a bowl add the egg whites, salt and the vanilla extract. Whisk with a hand whisk or an electric beater or a stand mixer until the egg whites become fluffy, airy and forms soft peaks.
- In another bowl add the peanut butter, brown sugar and the egg yolks. Mix well.
- Take a little of the whisked egg whites to the peanut butter egg yolk mix and whisk well, loosen the peanut butter mix slightly.
- Add the rest of the egg whites to the peanut butter mix and using a spatula fold the egg whites to the peanut butter without knocking out much air.
- The batter is ready โ Pour it in two greased ramekins until halfway.
- Bake in a preheated oven of 200 degrees Celsius for 8-9 minutes.
- Sift powdered sugar if you want on top and serve warm.
