White Chocolate Cherry Scones

White Chocolate Cherry Scones.. a scrumptious delightful tea time snack or breakfast if you do not mind the calories. Now I know why I’m not able to shake off those extra kilograms!!!

But look at these..  I can’t, won’t resist and discriminate butter and white flour if someone keep me supplied with Scones like these!! Juicy succulent cherry chunks, white chocolate on baking becoming caramelized will make every bite a perfect mix of flavors bursting in your mouth, you will have to try to understand the feeling I’m trying to put in words.  From start to end it takes less than an hour, these make for a delicious better than any store bought dry crumbly mess!!

White Chocolate Cherry Scones


Recipe is below
Ingredients (8 SCONES )
All purpose flour – 250g
Sugar – 2tbsp + 1tbsp
Baking powder – 1 tsp
Salt – 1/4 tsp
Unsalted butter – 110g, cold, grated or chopped
Dried cherries – 75g, pitted and chopped
White Chocolate- 50g, chopped
Milk – 100ml, add or reduce as needed

Method
1. In a large mixing bowl add the flour, 2tbsp sugar, baking powder and salt
2. Add the cherries and chocolate
3. Add the grated or chopped butter and using a fork rub it all with the flour. You should see the chunks of it
4. Add the milk and make a quick dough, not necessarily wet and even
5. Tip the mixture on a working surface with a parchment paper lined
6. Pat into a rectangle, fold the dough from all sides so you get a good laminated dough. Check the video
7. Pat into a 4cm thick rectangle. Cut out shapes or cut into squares
8. Brush the top with milk and Sprinkle with remaining sugar
9. Arrange on a baking tray with enough space and bake in a preheated oven at 180°C
10. Enjoy with cream or butter and jam
