Pudalangai Paruppu Usili || Vegetables Lentil Stir-fry

Pudalangai Paruppu Usili.. Lentils and vegetable stir fry. Cooking vegetables is such a joy, a new recipe always pop up and becomes an instant favorite. This Stir-fry is one such recipe.. very easy to make and even easier if you have left over lentils from making vadai.
I made from scratch though and the recipe is below.
A delicious pudalangai Paruppu Usili aka lentils Stir-fry which is super healthy, quick to prepare and oh so yummy if you are looking for a vegan protein packed recipe.
Ingredients
**For the lentils**
Channa dal/ split chickpeas – 150g, soak for an hour
Dried Red chillies- 4
Fennel hits – 1/2 tsp
Onion – 1 large, chopped
Coriander leaves – chopped, 1/4 cup
Salt as needed
**For Stir-fry **
Olive oil – 2tsp
Mustard Seeds – 1/2 tsp
Curry leaves – 1 sprig
Snake gourd or any veggie like carrot, french green beans – 200 g
Turmeric Powder
Steamed or fried lentils from above – 1 cup
Grated coconut – 4 tsp
Salt – for taste

Method
1. Grind coarsely the soaked lentils, dried chillies, fennel seeds without any water.
2. Mix onions and coriander leaves to the lentils and add salt to the batter.
3. At this point you can fry them into masal vadai, make small balls and steam or simply spread on top of a baking sheet with oil sprayed and air fry at 180 for 6 to 8 minutes.
4. So deep fried, or steamed ir air fried just mash slightly with a fork into small bits and pieces. Keep aside
5. In a pan heat the oil, add mustard seeds. When they pop, add the curry leaves followed by the vegetable – gourd or carrots or beans. Stir in.
6. Add salt and turmeric powder. Mix and cook for 3 minutes in medium flame.
7. Add the lentils from step 4in the pan and stir to combine. Cook for 2 minutes.
8. Add grated coconut and give a quick stir.
9. Serve hot the stir fry with rice or bread.

Notes
- Use any vegetable in place of snake gourd. Carrots, french beans or even cabbage works well.
