Avarakkai poriyal || Broad beans stir-fry

Avarakkai poriyal.. Broad Beans poriyal.
They aren’t as famous the French green beans. But I love them when I find them fresh in the shops and make them into this delicious stir fry, tamil style.
Goes well as a side dish or just add a soft boiled egg on top, you have a great salad bowl.
Recipe is below –
Ingredients
.
Broad beans – 250g, clean and slice into strips
Onion – 1 large, sliced
Green chillies- 2
Curry leaves – 2 sprigs
Mustard seeds – 1/2 tsp
Grated coconut – 1/2 cup
Oil – 2tsp
Salt – as needed
Turmeric powder – 1/4 tsp
Chilli powder – 1/2 tsp
Method
.
1. In a pan heat the oil and add the mustard seeds.
2. Add the curry leaves,Broad beans, onion, chillies. Mix well.
3. Add salt, turmeric powder, Chilli powder and a splash of water. Cook just for 2 minutes. You want the beans crunchy.
4. Add in the grated coconut and give a quick stir.
5. A very simple avarakkai poriyal/ Broad beans stir fry is ready.
