Honey Roasted Figs Butter Sponge Cake
 Hey guys, hope you have all been having good times and have been having a very great weekend. I am having a great time too and wanted to share my recipe for the honey roasted figs butter sponge cake.
This is one recipe I have always wanted to try, but have had continuous failures. First two times have been a disaster and the third time I tried changing the recipe and landed with the gold mine. My fourth time now, my figs butter sponge was impeccable and I definitely want to share with you guys.
Caramelized figs here in my recipe are honey roasted. Instead of having white sugar or brown sugar, I decided to go with the much more natural option which is the honey. The results are, as you can see, perfectly caramelized figs with a slight bitter note, which will go perfectly hand in hand with my sweet sponge cake.
And the mould used here is my new Christmas tree mould.., I am trying to season the mould for my Christmas Bakes.

Let’s get onto the recipe now

Ingredients required – Serves 8
  1. Butter at room temperature – 1 cup
  2. Light brown sugar – 1 cup
  3. Eggs at room temperature – 3nos
  4. Vanilla essence – a few drops
  5. Self-rising flour – 1 cup
  6. Baking Powder – 1tsp
  7. Figs – 8 Large
  8. A bowl of honey, about 2tbsp
  9. Salt – 1/2tsp

Preparation method

First make your honey roasted figs.
  1. Cut the figs in halves and dip them in honey bowl, cut side down.
  2. Heat a non-stick pan or cast iron pan a little butter. Sear and caramelize the honey dipped figs in the hot pan, cut side down again and let it roast for a few minutes. DO not flip them and take them off the heat. Let them cool. WIN_20181110_17_17_31_Pro

Butter sponge recipe

  1. Beat the butter and sugar until the mixture is fluffy and creamy with a wooden spoon. If you have a beater, use it to make the work simple.
  2. Add eggs one by one and continue beating until all the eggs are completely Incorporated.
  3. Add the vanilla essence and mix well. WIN_20181110_17_17_21_Pro
    Sift in the self-rising flour, baking powder and add the salt and mix with a wooden spoon.
  4. The sponge cake batter is ready now. Load them in your prepared tin. WIN_20181110_17_21_54_Pro
  5. Arrange the caramelized honey figs in the batter carefully without pushing them in.
  6. Bake the  in a preheated oven of 180°C for 30-40 minutes.WIN_20181110_17_24_05_Pro
    Once your cake is cooked, rest for a few minutes and demould them. Let it cool until it is warm on the rack.
  7. Dust them with some icing sugar if you like and serve them warm with ice cream of your choice.WIN_20181111_13_41_55_Pro
