Fried Fish[Meen Varuval] – Indian Style

Fried Fish[Meen Varuval] – Indian Style

My love for cooking started developing from a young age of 7. I have no idea from where. I always used to catch up with all the cookery shows, which I must say was very limited 20 years back, at least in India.

And I used to love watching mom, grandma and aunts cooking. My mom is an excellent cook, from whom I have learnt all my regular cooking methods that is south Indian – Tamil type of cooking. She has her own way of cooking which she says has come from her mother-in-law and my dad’s family. I am sure I will mention my this love for my mom’s cooking in more blogs.

Fish Fry

So today’s recipe is one of my mom’s recipe and a family favorite. Fried fish platter. Perfect for brunch or lunch and outdoor parties where you can even grill them. The recipe is so simple and all you need is a handful of ingredients to make the fishes finger lickingly (not a proper word??!) Delicious.

This is one of my 3 step cooking – Here you CLEAN – MARINATE – FRY

I have a mixture of small fishes here for this recipe that results in crispy goodness that we crave. And the fishes are on bones and have skin on them so don’t worry about filleting. This is one super simple recipe that is totally south Indian and not something you would not want to try.

In here I am trying these in my cast iron frying pan (Tamil vessel named ‘irumbu kadai’). You can use a regular deep dish pan or a grill of you want to cut the oil with occasional oil sprays and splashes. Or just wrap them in an aluminum foil and bake in oven at 230°c for 30 minutes & unwrap and bake again for 5 more minutes.

Whatever your cooking method, it will be delicious. But don’t miss out on our Tamil way of cooking which is the iron pan to fry these fishes. This is what will the difference in the taste and the crispness.

Now let’s get on to the recipe.

Simple Fish Fry Recipe. Use Any fish you have for this recipe

Ingredients

  • Fish, gutted and cleaned – 400gms

  • Salt as per taste

  • Turmeric powder – 1/2 tsp

  • Chilly powder – 1tsp

  • Oil to fry

  • Lemon to serve

Directions

  • Score deep lines on your fish so the marinating ingredients get in the fish nicely
  • add salt, chilly and turmeric powder to fish and mix them in with the fish. I always used to put them all in a big box with a lid, close it and shake well. This way all the ingredients will get together like you won’t believe and no messy hands.
  • Marinate for 30 minutes to overnight in refrigerator.
  • Heat oil in the pan and once the oil is hot drop in your marinated fishes and fry them carefully. Turn them once you see the site down is golden and fried and cook fully the total fry time should be 6 minutes for a medium batch of 4-5 pieces of fish.
  • Serve hot with lemon
