Easy Aloo Paratha Recipe

Not the best looking Aloo Parathas, but the best tasting stuffed Paratha I have ever made. Anything that needs manual work, like hand rolling the roti instead of using an appliance is not my strength I guess!
But if you are marginally good at rolling a dough stuffed with spicy tasty filling, go for it. The filling comes together in 5 minutes if you have boiled potatoes. Add the basic spices and a little green ingredients. It’s the best tasting meal you will ever make. Serve with pickle or tangy chutney of choice and curd/yogurt.

Ingredients – Makes 8 Paratha
**For the filling **
Potatoes – 3 large, about 400g, boiled and mashed
Onion – 1 large, chopped
Green Chilli- 1 large, minced
Garlic – 2 cloves, peeled and minced
Ginger – a small piece, peeled and grated
Coriander leaves or green onions – as needed
Salt – for taste
Turmeric powder – 1/4 tsp
Red Chilli powder – 1tsp
Coriander seeds powder- 1/2tsp
Roasted cumin – 1/2 tsp, ground
Garam masala – a pinch
Sesame seeds – 1 tsp
**For the dough**
Whole wheat flour – 400g, extra to dust
Salt – 1tsp
Water – 250ml, adjust as needed
Ghee to cook

Method
1. Make a soft pliable dough using the flour, salt and water
2. Rest it while you make the filling
3. In a bowl add all the ingredients needed for the filling. Mix well.
4. Divide the dough and filling into 8.
5. Stuff and roll.
6. Cook in a hot pan on both sides with Ghee smeared as you like.
7. Serve hot with curd and pickle or chutney.
