Carrot Beetroot Halwa from leftover pulp

Carrot Beetroot halwa made from the leftover pulp after juicing carrots and beets in my slow juicer.
I also made the sweet with coconut sugar.. 便 it is just perfect 殺

Ingredients
Carrots – 4
Beetroot – 2 small
Milk – 2 cups
Sugar of choice – 1/2 cup
Ghee – 4 tsp
Nuts of choice – as you like
Cardamom seeds- 2 pods

Method
1. Wash and clean the veggies and juice them
2. Have the juice with your breakfast and save the pulp for dessert
3. In a wide pan heat 2tsp of ghee and add  the veggie pulp
4. Sauté for a few minutes
5. Add the milk, mix well and cook in low to medium flame for about 15 minutes until the milk is totally absorbed and the carrots are soft
6. Add the sugar, I used coconut sugar and stir well
7. Continue cooking for about 5 minutes until the mixture is thick
8. Add the remaining 2tsp Ghee, cardamom pods and seeds, nuts
9. Mix thoroughly
10. Enjoy warm

Ingredients

  • Carrots – 4
