Baked Banana Oatmeal Cups

Baked Banana Oatmeal Cups..
An easy pick me up breakfast dish that needs 5 minutes prep time and 25 minutes bake time and you  have bite sized breakfast that is delicious,  chocolate-y, nutritious.
All you need is a blender and a muffin pan. Put all the ingredients in a blender, make the batter and Divide the batter in a muffin pan, bake.


Ingredients – makes 6 muffin bites

Banana – 1 ripe
Milk of choice – 120 ml
Whole wheat flour – 1 tbsp
Rolled oats – 90g
Brown sugar – 3 tbsp
Baking powder – 1 tsp
Vanilla extract- 1tsp
Salt – a large punch
Coconut oil – 2 tbsp
Chocolate chunks – as needed
Melted chocolate or nutella – 3 tbsp
Banana slices to top, optional

Method

1. Put all ingredients except the chocolate and the topping Banana slices in a blender and blend until smooth. Fold in the chocolate chunks
2. Divide the batter on greased muffin pan. Top the batter with chocolate or nutella swirls and place Banana slices
3. Bake for 20 to 25 minutes at 180Β°C preheated oven
4. Enjoy warm or cold as you like
