Sweet potato coconut balls.. Three ingredients, 15mins. A healthy, delicious breakfast or snack.
- Start with the sweet potatoes, microwave the steam potatoes with some water in a closed microwave safe steamer for 12 mins. You can also pressure cook in the cooker or use the pressure cook mode in your instant pot.
- Once cooked,peel off the skin(carefully,it will be hot. Use a fork).
- In a bowl, put the peeled sweet potatoes and mash use using a fork. No issues if you end with a chunky mash. Add freshly grated coconut and some castor sugar for taste.
- Mix and make them in to small balls. Serve warm.
