Slice and Bake Choco Chip Cookies

Aka easy to make choco Chip Cookies that you do not have to worry if they will bake well, spread properly if not Chilled Cookies! Too long to say, yes. But that’s so true if you don’t mix well or miss ingredients, the choco Chip Cookies are just disaster. That’s when the recipe of buttery shortbread like slice and Bake choco Chip Cookies come in handy. Honestly I love the classic choco Chip Cookies, but the recipe sometimes do fail. So a fool proof delicious alternate is needed and the recipe is right here.


Ingredients – Makes 24 Cookies

Unsalted Butter – 75g
Icing Sugar – 120g
All purpose Flour – 200g
Egg – 1
Vanilla extract – 1 tsp
Salt – 1 pinch
Choco Chip – 100 g (I used two toned chips)

Method
1. In your food processor or mixing bowl add the icing sugar. Run it until it is soft and looks seived with no clumps.
2. Add the butter and mix well until creamy.
3. Add the flour, salt, vanilla and the egg. Mix until the dough come together.
4. Add the choco chips to the dough. Give a quick stir so it is evenly spread.
5. Divide the dough into two, on a parchment paper lined surface roll each of it into a log.
6. Chill until you preheat the oven at 180°C.
7. Slice the dough with a sharp knife and arrange on a baking sheet.
8. Bake for 20 minutes.
9. Cool and store in a container.
10. Serve for tea or as a snack.
