Instant Wheat – Ragi Dosa

Instant Wheat – Ragi Dosa. So, my parents call me twice everyday morning and evening to see what I cooked, what I did through the day and so on.
Most of the talks are centered on my son, what is he doing, did I spend time with him or kept on working like the crazy woman I’m, what did I feed him for breakfast, lunch and what have I prepared for dinner and so on.
Whenever I say toast or cereal for breakfast my mom will become quiet and say make him a good snack!! Like I don’t have to eat the same!! Indian Parents and grand parents.
The same dialogue won’t come if it is dosa, idli or vadai. I make a variety of dosai at home for breakfast when I have time to soak, grind and ferment the rice – lentils batter. But time consuming, totally! So most days to skip the get good snack or breakfast for my son conversation, I make cheat dosas like this. Instant batter, healthy and super tasty too.
This is how I make them –
Ingredients
- Whole Wheat Flour – 1 Cup
- Finger Millet [Ragi Flour] – 1 Cup
- Salt – 1 teaspoon
- Water – 2.5 to 3 cups. Adjust as needed for a smooth dosa batter consistency.
- Ghee to cook.
- Side Dish of choice – Curries or Chutneys
Method:
- In a big mixing bowl, add the flours. salt and water and make a dosa batter.
- Heat the dosa tawa and make dosas just like how you would make crepes or regular dosa.
- Sparingly drizzle with ghee on the sides to get a crispy dosa. Cook for 2 minutes.
- Flip and cook for a minute more.
- Fold into half like in the picture.
- Serve hot with side dish of choice.
