Instant Fluffy doughnuts || Homemade Funnel cake

Homemade Funnel Cakes.. also known as Fluffy doughnuts in our home. A perfect snack, if feeling fancy, a breakfast too since these are light enough with a cup of coffee or hot Chocolate!
Making these instant Fluffy doughnuts is also therapeutic, pipe in the batter in hot oil and watch them raise on to the surface. So satisfying like my son always says!!


With only the basic of the ingredients from the kitchen, covered in sweet icing sugar, these doughnuts can be made all under 20 minutes, including frying time!! Just as quickly you make them, they will be gone in minutes.
I like to serve them with some Berry jam or lemon curd. Sometimes with chocolate sauce..  all are good! Just don’t forget to drench them in powdered sugar first!!

Ingredients
.
All purpose flour – 200 g
Baking powder – 1 1/2 tsp
Salt – 1/2 tsp
Icing Sugar – 2 tsp plus more for dusting
Milk – 150ml
Eggs – 2
Vanilla extract – 1tsp
Vegetable Oil to fry

Method
.
1. In a mixing bowl add the the flour, baking powder, salt and icing sugar. Mix.
2. Add the milk and the eggs, vanilla. Mix into a thick but glossy batter that falls smoothly when dropped.
3. Transfer batter into a piping bag.
4. Heat oil and pipe the batter like Funnel cakes are made.
5. Dust generously with icing sugar while hot.
6. Serve with chocolate, jam or fruit curd. Delicious
