S’mores Banana Bread

S’mores Banana Bread . A delightful warm, crispy chewy marshmallows topped chocolate Banana bread.. it is like the common Banana bread, but very different with its toasty marshmallow top. Perfect with warm chocolate drink of choice on any day no matter if it is hot or cold. And the best use of any leftover marshmallows taking space in those airtight containers!! And hey, Banana bread is so tolerant you can literally add anything to it and call it a day!! Haha..

Ingredients- one loaf
Ripe bananas- 2
Soft brown sugar – 75g
Caster Sugar- 45g
Vegetable oil – 75ml
Eggs – 2
Vanilla extract- 1tsp
All purpose Flour – 175g
Baking powder – 1tsp
Baking soda – 1/2 tsp
Salt – a large pinch
Chocolate chunks – 110g, chopped
Marshmallows- to top the loaf pan with batter

Method
1. In a food processor or a mixing bowl add the mashed bananas, sugars, eggs and vanilla. Process until combined
2. Add the oil and mix
3. Add the flour, baking soda, baking powder and the salt
4. Add the chopped chocolate. Save some for topping. Fold in
5. Transfer the batter to a lined and greased loaf tin
6. Top with the marshmallows and remaining chocolate
7. Bake at 180°C for 50 to 55 minutes
8. Cool slightly and slice, enjoy
9. Store in a loosely covered container. The toasted marshmallows may become soggy on keeping them closed tightly
