Healthy Almond Apple Snack Cake

A simple but an apple loaded snack cake recipe is here and while apples and walnuts are the classic combination, with a twist in the recipe we have the Healthy Almond Apple Snack Cake.

Very simple to make, all you need is a mixing bowl or a food processor. Add all the ingredients one by one and combine them all. Once you have fluffy soft batter, fold in the cinnamon grated apples. Bake and you are set for a couple of days with a healthy-ish Almond Apple cake. Perfect for snacking.

A soft and delicious Healthy Almond Apple Snack Cake that is easy to bake and is perfect for breakfast or just snacking.

  • Mixing bowl/Food processor
  • Grater for apples


  • 3/4 Cup [100ml] Vegetable oil I used light olive oil
  • 1 Cup [110g] Soft Brown Sugar
  • 2 tbsp Honey or Maple Syrup
  • 3 Eggs at Room temperature
  • 2 tbsp Greek Yogurt or simple thick yogurt
  • 1 tsp Vanilla Extract
  • 1 tsp Ground Cinnamon
  • 1 1/2 Cups [200g] Flour Gluten free Mix will work.
  • 1/2 cup [60g] Almond Flour [Ground almonds]
  • 1 tsp Baking powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 4 Apples[Any variety will work] Peel, core and grate.
  • 1/2 Cup Sliced almonds Optional


  • Preheat the oven at 180 degrees Celsius
  • Add the ground cinnamon to the grated apples and set aside
  • In a large mixing bowl or in the food processor bowl add the oil, brown sugar, honey, yogurt, eggs, vanilla extract. Whisk/process well.

  • Add the flour, almond meal, baking powder, baking soda and salt. Mix just until combined. The batter will be super fluffy.

  • Fold in the cinnamon stewed apples carefully with a silicon spatula.

  • Bake in a spring form pan of choice. I use mini cake pans.

  • Sprinkle the almonds on top if using.
  • Bake at 180 degrees Celsius for 45-50 minutes until the cake is baked.
  • Cool on a rack and serve.
  • Enjoy 🙂


  1. Grate or cut the apples as per convenience
  2. Use any vegetable oil of choice
  3. Same for flour – use AP or GF mix. All will work
