Healthier Strawberry Mug cake

Healthier Strawberry Mug Cake with good for you ingredients.. sometimes all I need is a quick dessert and most times I’m not worried about what goes in it. Yeah, Sweet tooth drives around my choice of desserts mostly. But sometimes I do pick up some healthy food and this recipe is one.
This healthier Strawberry Mug cake is quick to make, all you need is 10 minutes and 2 minutes in microwave cook time. And with healthier good for you ingredients too..

Ingredients (serves 2)
Strawberry- 60g
Coconut Sugar – 15g
Coconut oil – 25ml
Soft brown sugar – 45g
Salt – 1/4 tsp
Almond Milk – 75ml
Vanilla extract – 1 tsp
Almond flour – 90g
Baking powder- 1 tsp
Vanilla powder – 1/2 tsp (optional)
Method
1. In a small bowl macerate the strawberries and the coconut sugar using a fork. Keep it aside.
2. In another bowl add the coconut oil, brown sugar, salt, milk and the vanilla extract.  Mix well
3. Add the flour, baking powder and vanilla powder if using. Combine well.
4. Divide the batter into 2 oven/microwave safe mugs. Or into bug Mug or baking dish as you like.
5. Top the mugs with the macerated Strawberries.
6. Microwave for 2 minutes in medium.
7. If baking bake at 180°C for 25 minutes.
8. Serve with vanilla ice cream.
9. Enjoy the healthier Strawberry Mug cake
