Coconut Custard Cookies

Coconut Custard Cookies.. my cookie recipe that tastes just like the Karachi style fruit biscuits but no tooti frooti in these cookies, but toasty wholesome Coconut. Just so delicious and I just couldnβt stop munching on these all day. The Custard part of the Cookies come from the Custard powder, store bought yes, but you can very add the homemade Custard or even from a store bought Jar of custard.
With the addition of ghee, whole milk(replace withcplant based milk as you like), these cookies are delightful.
Roll them in more coconut to have a chewy Coconut texture outside.. love the additional Coconut after it is baked. Check out my recipe for the coconut Custard Cookies below..

Ingredients
Ghee β 75ml
Icing sugar β 125g
Custard powder- 50g
All purpose flour β 125g
Dessicated Coconut- 50g + more for rolling the dough
Baking powder β 1 tsp
SaltΒ β 1/2 tsp
Milk β 150ml, adjust as needed
Method
1. In a mixing bowl add the ingredients one by one and combine well
2. Add milk finally to bring together the dough
3. Scoop out portions using an ice cream scoop or roll and cut out the dough
4. Roll the scooped out dough in more dessicated Coconut. If cutting out shapes, Sprinkle generously to coat the coconut on top and sides
5. Bake at 180Β°C for 16 to 20 minutes until the cookies are baked
6. Enjoy with milk or jam of choice
