Blueberry Brioche Bagels

Blueberry Brioche Bagels..
A very great variation from Blueberry muffins or Scones, that is less sweeter, more juicy and substantial thereby making it perfect for breakfast.
I just used my favorite brioche dough, enriched with eggs, milk and butter, added lots of blueberries, shaped them into bagels. After some quick resting time gave them the baking soda boiling time followed by the egg wash, and the addition of loads of seeds of choice. I knew it is all going to be sweet filled so went with sesame seeds and chia seeds. Then baked to the golden perfection, these bagels are something else.
Serve with cream cheese, maple and fruits of choice to make it a happy breakfast dish.

Ingredients
Brioche dough
Blueberries
Egg
Mixed seeds of choice
Baking soda
Method
1. To the Brioche dough add the blueberries and mix well
2. Divide the dough equally into as many bagels you are making and shape them
3. Rest the bagels covered in a towel while you boil water
4. To the boiling water add baking soda and a little honey, optional
5. Carefully drop the bagel to the boiling water and wait for a minute or 2 until it floats
6. Quick a quick egg wash and Sprinkle on seeds of choice
7. Bake at 220°C for 15 to 25 minutes, until golden in color
8. Cool on rack
9. Serve with cream cheese and maple syrup, fruits of choice
